Chocolate Spiced Zucchini Loaf

2/3 cup unsalted butter
2-1/3 cups sugar
4 eggs
3 cups flour
1/3 cup cocoa
2 tsp baking soda
1 tsp cinnamon
2 tsp vanilla extract
2/3 cup dried cherries
3 cups shredded zucchini
2/3 cup water
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp cloves
1/4 tsp ground allspice
1/4 tsp ground cardamom
2/3 cup Calebaut chocolate chunk)

Heat oven to 350F. Grease 2 loaf pans.
Mix shortening and sugar. Add eggs, zucchini and water. Add spices and dry ingredients. Stir in chocolate and cherries. Pour batter into pan and bake 1 hour or until toothpick inserted in center comes out clean.(This recipe is great with cream cheese icing as a substitute for carrot cake
