Chocolate Filling

This is a great recipe to serve as is or to use as a filling for cakes.

700 ml 35% CREAM whipped to soft stage. Slowly melt 400 g of good chocolate, microwave is fine, but slowly.

Take 1/3 of the cream and add it to the warm chocolate while whipping it fast non stop until all combine... then quickly add all of that to the rest of the whipped cream and keep whipping it until all smooth. Do not over whip!


Add Flavors to taste if you wish:

Grand Marnier + Orange rind
or
Mint extract + Creme de Menthe
or
Hazenut paste
or
Banana extract with slices of banana at the bottom under the chocolate whip cream
or
Coffee extract
or
Baileys
