Cheddar and Apple Stuffed Pork Chops

Ingredients

Stuffing
1 shallot (or half a red onion) chopped
2 large apples, peeled and grated
1 1/2 cups (375 mL) Canadian Medium Cheddar cheese, grated
1 1/2 tsp (7 mL) chopped fresh sage or 1/2 tsp (2 mL) dried sage
Salt and freshly ground pepper to taste

Pork Chops
4 pork chops, butterfly cut
1 tbsp (15 mL) butter, melted
Salt and freshly ground pepper to taste


Instructions
Combine all stuffing ingredients and season generously. Top half of each pork chop with 1/4 of the stuffing mixture. Fold the other half over the stuffing and secure with toothpicks.
Grease and pre-heat a ribbed cast-iron skillet to medium. Baste pork chops with melted butter, and season with salt and pepper. When oil has begun to smoke, place chops in skillet. Cover, reduce heat slightly and let cook for 5 to 7 minutes on each side, turning only once. Serve with grilled vegetables.
