Sugar Cane Shrimp

Sugar Cane Shrimp

Cajun Marinated Shrimp skewered with Sugar Cane on a bed of Tropical Fruit Salsa dressed with a Balsamic Vinaigrette.

Ingredients & method for shrimp:

8 med Shrimp (deveined)
2 Sugar Cane Sticks
1 tsp Cajun Seasoning (powder)

Clean & season shrimp. Bore a hole in each shrimp with a knife. Cut sugar cane sticks into skewers. Pierce one skewer gently through 4 shrimp. Dust with cajun seasoning.
Grill over hot fire 1 min each side. Serve on a bed of fruit salsa.

Ingredients & method for salsa:

Mixed Fresh Fruits – mango, papaya, melon… (diced)
1 Onion (diced)
Yellow,Green, & Red Bell Peppers (diced)
1 clove Garlic (minced)
2 tsp Olive Oil
1 tsp Balsamic or White Vinegar
½ tsp Pepper Sauce
Salt & Pepper

Mix all ingredients in large bowl. Add salt & pepper to taste.
