Pan Seared Canso Halibut With Caramelized Onion, Ginger & Scallions

Serves 6
Ingredients:
2 Tbsp. Olive Oil
6 each 6oz. Portions of Halibut
1 large onion, sliced
2 tbsp. minced ginger
Salt and Pepper to taste
½ cup green onions slivered
3 Tbsp. Chopped Cilantro

To Prepare:

1. Heat olive oil in a large fry pan until almost smoking, add Halibut and sear on both sides. Remove and place on a sheet pan and place in a 350 Deg. F. oven for 8 – 10 minutes.
2. To frying pan, add sliced onion, cook on medium heat 15 minutes until browned, and add ginger, green onions and cilantro. Toss well and season with salt and pepper.

To Plate:

Place Halibut in center of plate and top with caramelized onion mixture.
