Mashed Potatoes With Caramelized Shallots, Dragon’s Breath Cheese & Chives

Serves 10
Ingredients:

1 Tbsp Olive Oil
3 Cups Shaved Shallots
1 Cup Dragon’s Breath Cheese or Stilton
Salt & Pepper to Taste
5 lbs. Red Skin or Yukon Gold Potatoes
½ Cup Sour Cream
4 Tbsp Minced Chives
1 Cup Butter (unsalted)

To Prepare:

1. Heat olive oil in a large fry pan, add shallots. Reduce heat and cook until golden (15 to 20 minutes).
2. Peel potatoes and place in pot of lightly salted water. Cover pot and cook until tender (approx. 25 minutes). Strain off water and place in mixer.
3. Add cheese, sour cream, chives and butter. Season with salt and pepper.

To Plate:

When plating, sprinkle with chives if desired.
