Dried Cherry & Rosemary Spread

Serves 6 as an appetizer

Level of difficulty: easy

Ingredients

1 log (10 oz.) soft goat cheese such as chevre
2 tbsp fresh rosemary, leaves pulled from stem
2 tsp aged balsamic vinegar
1/2 cup dried cherries (or dried cranberries)
milk, if necessary, only enough to make a spreadable consistency
1/8 tsp kosher salt
1/8 tsp fresh ground black pepper

Instructions

In a small food processor or using an immersion blender, process cheese, rosemary, vinegar and dried cherries together until smooth. If necessary add a few drops of milk and blend again, repeating until you get the desired consistency for a spread. Stir in salt and pepper, mixing until well combined. Cover and refrigerate a few hours, or overnight. Serve at room temperature with crackers or bread.
