Texas Beer Ribs

Ingredients
3 racks baby back ribs, each section cut in half
½ cup soy sauce
3 cloves garlic, crushed
2 bay leaves
3 tbsp maple syrup
1 tbsp Asian chili sauce
2/3 cup dark beer
½ tsp pepper
1 tbsp Worcestershire sauce
1 tbsp Tabasco sauce
2/3 cup barbecue sauce
1 tbsp rice wine vinegar

Method
1. Heat oven to 350 degrees.
2. Place ribs bone-side up.
3. Combine together all ingredients. Mix well.
4. Pour over ribs. Cover with foil and bake for 1 ½ hours or until tender.
5. Drain off all liquid into a pot. Remove fat from surface and reduce sauce to coat the back of a spoon. This will take about 10-15 minutes.
6. Dip each ½ section of ribs in sauce.
7. Heat grill to medium.
8. Grill ribs until done, approximately 5 minutes on each side.
