Henry of Pelham Cuvée Catharine Brut Sparkling, Niagara Peninsula, Ontario V.Q.A, Canada: This sparkling gets better every year, even though it's not vintage-dated. Lovely finesse and mousse with green apple vibrancy. The grapes were hand-picked in 50 pound lugs so they weren't bruised. The winery does press fractioning meaning the first bit of the juice (the head) and the last bit (the tail) aren't used in the wine just the juiciest, tastiest part of the juice. They also use the traditional Champagne method to make the wine. The wine spends 30 months on the lees which gives it a creamy texture. Serve as an aperitif on its own or add 1 oz. of Riesling Icewine or 1 oz of Cabernet Franc Icewine to 3 oz of Cuvee Catharine to make a Kir Catharine. Flat Rock Riesling 2014, Twenty Mile Bench, Niagara Peninsula, Ontario V.Q.A., Canada: The winery sent me the 2014 vintage of this lovely riesling to taste and evaluate, which is fortunate since it was the 2013 vintage at the LCBO tasting. Green apple and white pear. Love it. Building an inukskuk is now a ritual at the end of harvest for this winery: lifting the heavy stones requires a team effort. Pair with roast turkey and fun. The winery does whole cluster pressing to extract pure flavour, and only of the first 600 litres per tonne of fruit. Ed allows the juice to settle during a long, slow fermentation. The 2014 vintage is a blend of two distinct blocks of 21B clone vines nowin their early teens as the winery describes them. Finishes with fresh pink grapefruit notes. Villa Maria Private Bin Merlot Cabernet Sauvignon 2012, Hawke's Bay, New Zealand: The Hawke's Bay region of New Zealand tends to be warmer than Marlborough (especially the nights are not as cool), thus it's better known for later ripening grapes such as Merlot and Cabernet Sauvignon. Villa Maria demonstrates this amply in the glass with a blend of 75% Merlot and 25% Cabernet grapes. A special area known as Gimlet Gravels provides most of the fruit for this wine and yet it's only 800 hectares in total, with old soils of fractured rock that are free draining which means the vines suffer as they should to produce great wine for you. In fact, you can go down 20 to 30 feet here and still find gravel as this was an old river bed that became exposed in the 1880s after an earthquake. This wine is amazing in that it delivers far more heft, weight and dark fruit flavour than you'd expect from just 12.5% alcohol. Yay! Drink: 2013-2018. 310300 12.50% XD 750 mL  $16.95 Score: 89/100.
