Why This Wine: This wine is bright and clear with a golden core. Aromas of oak, nuts and smoke make it a great match for baccala, as do the flavours on the palate of butter, pine nuts, macadamia nuts and tropical fruit. There's a nice, long finish with mango notes on the end.
Why This Wine: This dry, crisp, white wine has undertones of gooseberry and crisp apple fruits.The tart balanced acidity pairs this wine perfectly with the saltiness of baccala. I'm a believer in pairing food and wine regionally and the River Duero river flows from Rueda right into Portugal.
Why This Wine: This elegant "Superventian" has tantalizing tropical fruit aromas, delightful honeyed fruit on the palate, excellent structure and body. Not only is it lovely as a sipper, the body and citrus twist make it an excellent accompaniment to the baccala. It's a great go-to Italian dry white wine.
Why This Wine: Growing up in Newfoundland, you try dried and salted cod at an early age. The Robert Mondavi Fume Blanc is rich, but at the same time crisp and refreshing. The balance between citrus and herbal flavors would complement the Baccala.
Why This Wine: A zesty white wine with lime-citrus aromas that can stand up to this dried and salted seafood dish. The mouth-watering acidity is a great contrast to the dish, and refreshes your palate. This vibrant white wine also pairs well with other seafood dishes.
