Plan the Perfect Spring Picnic

There’s nothing quite like finding the perfect picnic spot. However, choosing the spot is only half the battle. The other half is packing the right wine and Canadian cheese. Luckily, I found a great combination of flavours that will have you and your fellow picnicers giddy with anticipation.

This Canadian Swiss Cheese and Roast Beef Sandwich is a delicious picnic treat. With melted Canadian Swiss and savoury roast beef, you will be full and satisfied while you sit and chat the afternoon away. Tote along a wine with a touch of sweetness like a Riesling from Konrad Bunch Selection, or an unoaked Chardonnay from Kim Crawford. Eat. Drink. Smile. Before you know it, summer will be here!

Canadian Swiss Cheese and Roast Beef Sandwiches

Ingredients:

1 large red onion, thinly sliced
1 tbsp (15 ml) olive oil
2 tbsp (30 ml) red wine vinegar
1 tbsp (15 ml) honey
Butter, softened
12 slices crusty bread each 1/2 inch thick (12 mm)
12 oz (375 g) thinly-sliced deli roast beef
Horseradish or
Dijon mustard, to taste
12 oz (375 g) Canadian Swiss-type* cheese, thinly slicedKim Crawford Unoaked Chard

Preparation:

Cook onion in hot oil in large non-stick frying pan over medium heat, stirring frequently until onion is tender, 8 to 10 minutes. Stir in vinegar and honey. Add salt and pepper to taste; set aside.

Spread butter over both sides of each slice of bread. Broil or grill 1 to 2 minutes per side or until lightly toasted and crisp around the edges; place on wire rack to cool.

Cover each slice of bread with roast beef. Spread with a little horseradish or mustard, if desired. Top with Canadian Swiss-type cheese and onion mixture.
